Sambhar Lentils

Main part:
1 large onion
1 clove of garlic, chopped
1 cm fresh ginger, peeled and chopped
1 green chilli, deseeded and chopped
1 tbsp oil
225g orange lentils
3 cups boiling water
3 tbsp lemon juice
1/2 tsp turmeric
2 tsp medium Bombay curry powder
1 1/2 tsp salt
450g cooked mixed vegetables
Spicy Oil
2 tbsp oil
1 tsp cumin seeds
1 tsp black mustard seeds
cilantro to garnish
- Grind onion, garlic, ginger and chilli to a paste. Fry in oil in saucepan until light gold.
- Stir in the lentils, water, lemon juice, turmeric, curry powder and salt. Boil, lower heat, and cover. Simmer
for 15 minutes, stirring frequently.
- Uncover and continue to simmer for 10 minutes, stirring often. Stir in the vegetables.
- Just before the vegetables are cooked, make the spicy oil. Heat the oil in a small saucepan until just
sizzling. Add the seeds, two-thirds cover the pan with a lid, and continue to cook until they stop
popping.
- Spoon the lentils into a warm serving dish and trickle the savoury oil over the top. Garnish, serve.
