Cauliflower Romagna-Style

1 cauliflower
1/4 cup olive oil
1 clove garlic, minced
2 tbsp chopped cilantro
salt & pepper, to taste
6 tbsp water
1 tbsp tomato puree (paste)
- Divide the washed cauliflower into small individual florets. Heat the oil in a large skillet and fry the garlic
and cilantro for a minute.
- Add the cauliflower, stir and sauté for 10 minutes or so, until browned in places. Mix and add water and
tomato puree (paste). Season to taste. Cover the pan and cook over low heat until tender (about 15-20
minutes).
