Fajitas
375 g beef (pounded flank steak worked well)
tortillas
Marinade:
1/4 c lime juice
1/2 c balsamic vinegar
2 tbsp soya sauce
1 tbsp chopped garlic
1 tbsp chili powder
1/2 tsp hot pepper flakes
2 tsp salt
Stir fry ingredients:
1/2 red onion, thinly sliced
3/4 cup red pepper strips
Optional fillings:
sour cream, salsa, refried beans, chopped lettuce, shredded cheese, chopped tomato, green onions, cilantro, etc
- Pound meat if required, to tenderize. Slice meat into thin strips. Combine all ingredients for marinade and
marinate for several hours.
- Drain meat. Stir fry in 1 tbsp oil until browned (3-5 minutes). Add onion and pepper strips and cook a few
minutes more. Keep warm.
- Warm 2 foiled-wrapped tortillas per person in a 325 degree oven.
- Serve with sour cream, salsa, refried beans, chopped lettuce, shredded cheese, chopped tomato, green onions,
cilantro, etc.
