Garlic Butter Mashed Potatoes

2 lbs potatoes, peeled and cut into chunks (orig. 1/4 are red)
1/2 cup butter
4 large cloves of garlic, thinly sliced
salt and pepper to taste
- Cover potatoes with salted cold water by 1 inch in a saucepan, bring to a boil, and simmer until tender, about
15 minutes.
- While potatoes are simmering, saute garlic in butter until golden and slight crisp, 5-10 minutes. Separate the
butter and garlic using a strainer, and reserve both.
- Drain potatoes, return to pot, and coarsely mash with a potato masher. Stir reserved garlic butter into
potatoes. Season with salt and pepper to taste. Serve with fried garlic on top.
