Pot Stickers

makes about 30
1/3 cup chopped cooked spinach
2 green onions, finely chopped
8 oz ground pork, chicken or turkey
2 tsp. grated ginger
1 tbsp. soy sauce
1/4 tsp. Asian chili sauce (or Tabasco)
1/4 tsp. granulated sugar
1/2 tsp. sesame oil
salt & pepper
2 tbsp. chopped fresh cilantro
30 wonton wrappers (Loblaw's has them near the tofu section)
1 tbsp. vegetable oil
3/4 cup water
- Combine the spinach, onions, pork, ginger, soy sauce, chili sauce, sugar, and sesame oil in a bowl. Season with
salt and pepper and stir in cilantro.
- Brush edges of wrappers with water. Place about 1 heaping teaspoon of filling in the center of each wrapper.
Bring the corners up to meet and pinch edges together.
- Heat the vegetable oil in a non-stick skillet over medium-high heat. Add the dumplings so they are touching
each other and cook until their bottoms are pale gold, about 1 minute. Pour in water and bring to a boil. Cover pan
and steam the dumplings until they are firm to touch, about 3-4 minutes.
- Uncover an cook until water evaporates. Place on a serving dish and serve with interesting sauces (chili sauce,
peanut sauce, etc...)
