Quiche
9 inch unbaked pie shell
1/4 lb bacon
egg white
2 c whole milk or half and half cream
3 eggs
1/4 tsp salt
1/8 tsp white pepper
nutmeg
1 green onion
1/2 c grated swiss cheese
- Preheat oven to 375F. Brush a 9 inch unbaked pie shell with the beaten white of an egg. Prick it with a
fork.
- Chop bacon into 1 inch lengths, and cook until almost crisp.
- Warm milk on low heat (to reduce cooking time).
- Whisk milk with 3 eggs, salt, pepper, fresh grating of nutmeg.
- Sprinkle cheese and finely sliced green onion in pie shell and pour milk egg mixture over top. Bake 35-40
minutes (over a cookie sheet to catch the drips), until top is golden brown and custard is set. Serve slightly
cooled.
