500g (1 lb) large floury potatoes, scrubbed
25 mL (3/4 fl oz) oil
25 g (3/4 oz) unsalted butter
1 onion, thinly sliced
- Preheat oven to 350 F.
- Boil the potatoes in a large pan of salted water. Reduce heat, simmer for 10 minutes.
Drain and cool completely in the fridge.
- Peel the potatoes and slice into fine sticks with the mandolin.
- Heat the oil and butter in an oven-proof non-stick skillet. Sauté the onion
until soft and transparent. Add the potato and season well.
- Stir for a few minutes, then press down gently with a wide spatula to form a thick,
flat pancake. Increase the heat to high, and brown the first side.
- Transfer the pan to the oven and bake for 15 minutes. Then loosen the pancake, turn
it out onto a large plate, and return to the pan, browned-side up. Do not break the pancake. Bake for 10 minutes.
Serve.
