Quick Salmon Sesame

4 tablespoons sesame seeds
2 thick salmon fillets, 150-175g each
salt & pepper
3 tablespoons of oyster sauce
1 tbsp sunflower oil
1 tbsp sesame oil
- Dry-fry the sesame seeds in a non-stick skillet over moderate heat for a few minutes until lightly toasted.
Preheat the broiler.
- Cut each fillet in half and season with salt & pepper. Brush generously with oyster sauce and coat with the
toasted sesame seeds.
- Heat the oils in the non-stick skillet until hot. Cook the salmon, on one side only, over moderate heat for
about 3 minutes. The edges should be firm.
- Transfer the salmon to the broiler pan, keeping it the same side up. Broil for about 3 minutes until done.
- Serve with lime wedges and extra oyster sauce on the side.
