Salmon Chowder
Wendy's favorite soup

makes 4
2 tbsp butter
1 small onion, chopped
2 tbsp flour
3 cups milk
2 potatoes, peeled and diced
2 cups cooked fresh salmon, flaked, or 2 184g cans
1 tbsp lemon juice
salt/pepper to taste
2 tbsp finely chopped fresh dill, or 2 tsp. dried
- Melt butter in medium pot on medium heat. Sauté onion until softened, about 3 minutes. Stir in flour and
cook for another minute.
- Pour in the milk and bring to a boil, stirring. Add the potatoes and cook, covered until potatoes are softened,
about 10 minutes.
- Stir in salmon and simmer for another 5 minutes. Season with lemon juice, salt, pepper and dill. Serve.
