Italian Sausage Salad

1 tbsp balsamic vinegar
1 tsp Dijon mustard
2 tbsp olive oil
1 lb hot Italian sausage
1/4 cup thinly sliced red onion
1/4 cup thinly sliced strip of red bell pepper
tomato wedges, for garnish
parsley/cilantro, for garnish
- Combine vinegar, mustard, and olive oil in a small bowl. Mix until smooth.
- Boil a pot of water and add sausages. Reduce heat to medium, and cook for 8 minutes.
- Broil sausages, 4 minutes per side.
- Remove from oven, and immediately slice sausages into 1/2" rounds, on the diagonal. Cut gently to obtain nice
slices.
- Drizzle with oil, mix in vegetables. Serve.
