Spaghetti with Smoked Salmon

makes 4
1 pound whole-wheat spaghetti
2 tbsp olive oil
1/2 cup crumbled feta cheese
cilantro to garnish
1 1/4 cups whipping cream
2/3 cup whiskey or brandy
4 oz smoked salmon
large pinch cayenne pepper
2 tbsp chopped fresh cilantro
salt and pepper
- Cook spaghetti in large pot of salted boiling water, adding 1 tbsp of oil. Drain in colander. Return to pan and
sprinkle with remaining oil. Cover and shake pot. Keep warm.
- In separate small pans, heat the cream and whiskey/brandy to simmering point. Do not boil.
- Combine cream with whiskey/brandy. Cut the smoked salmon into thin strips and add to the cream mixture. Season
with pepper and cayenne, and stir in cilantro.
- Transfer the spaghetti to warm serving dish, pour on sauce, and toss. Scatter crumbled feta over the pasta and
garnish with cilantro. Serve.
