Spicy Sausage Pasta
adapted from various recipes
Basic Ingredients
1 pound fresh linguine, or other fresh pasta (i.e., not dry pasta)
3 hot Italian sausages
Zesty Tomato Sauce
2 tbsp olive oil
2 tbsp chopped garlic
2/3 cup finely sliced onions
1/2 tsp salt
1/2 tsp freshly ground pepper
2/3 tsp hot chili flakes, or to taste
1 tsp dried oregano
1 tsp balsamic vinegar
2 cups canned tomatoes, coarsely chopped
To Garnish
freshly grated parmesan cheese, if desired
- Bring a large pot of water to the boil. Add the sausages and boil for 8 minutes.
- Meanwhile, in a medium skillet over high heat, add the oil, salt, and pepper, and cook for 30 seconds.
- Add garlic and chili flakes, and stir-fry for 1 minute.
- Add the onion and sauté until transparent.
- Add tomatoes, oregano, and vinegar. Stir-fry for 2 minutes, or until tomatoes break up and form a sauce. Reduce
to medium heat and cook for another 2 minutes. Remove from heat and cover. Set aside.
- Once the sausages have finished boiling, broil them in the oven for 4 minutes per side. Use the leftover
boiling water to boil the pasta as directed.
- Slice the sausages into 1/4" thick slices, on the diagonal. Add to the sauce. Add the sauce to the pasta, toss,
and serve.
