Orange & Star Anise Scallops

1 cup fresh orange juice
4 whole star anise
2 tbsp sugar
1 tsp cornstarch
2 tbsp peanut oil
1 tbsp short orange zest strips
4 medium leeks (white and pale green parts only), cut crosswise into 1/2" slices
16 sea scallops (about 300g)
- Boil juice and star anise in a saucepan until reduced to 2/3 cup, about 4 minutes. Cool; remove and reserve
star anise. Whisk in sugar and cornstarch.
- Heat the oil in a large heavy skillet over medium-high heat. Add orange peel and reserved star anise and
sauté for 1 minute. Add leeks and sauté until tender, about 6 minutes.
- Add scallops, sauté until opaque in the center, turning once, about 3 minutes. Add juice mixture and
boil to thicken slightly, about 2 minutes.
- Season with salt & pepper. Serve.
Serves 2 as an entrée.
